Pollo Aquascalientes features tender chicken simmered in a flavorful tomato broth with spices, perfect for comforting family meals or casual gatherings.

Ingredients

  • 1 cut up chicken
  • 1/4 cup olive oil
  • 1 chopped onion
  • 1 large can tomatoes
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 tablespoon chili powder
  • 1/4 teaspoon pepper
  • shake or two of red pepper

Instructions

  1. Cook the chicken in olive oil in a deep heavy pot, such as cast iron, for 15 to 20 minutes, turning to brown evenly.
  2. Sprinkle the chopped onion, tomatoes, lemon juice, sugar, salt, oregano, chili powder, pepper, and red pepper over the chicken.
  3. Cover the pot and turn down the heat to a strong simmer.
  4. Cook for another 45 to 60 minutes until the chicken is very tender.
  5. Serve the chicken on the side with the broth in a bowl.
  6. Sprinkle the broth with basil or serve together in a large soup bowl.
  7. Garnish with basil before serving.
