A vibrant and tropical coleslaw combining sweet pineapple and mandarin oranges with crunchy cabbage and warm spices, perfect for summer gatherings or as a refreshing side dish.

Ingredients

  • 8 oz pineapple bits
  • 1/2 cup mayonnaise or salad dressing
  • 4 cups raw shredded cabbage
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 11 oz mandarin oranges
  • 2 tablespoons pineapple juice

Instructions

  1. Combine pineapple juice with mayonnaise in a small bowl.
  2. In a large bowl, mix shredded cabbage with white pepper, ground ginger, ground nutmeg, and the mayonnaise mixture.
  3. Add pineapple bits and mandarin oranges to the cabbage mixture.
  4. Gently toss to combine all ingredients.
  5. Cover and chill before serving.
