Poor David'S Soup
Ingredients
- 1 (12 oz.) pkg. Great Northern beans ⓘ
- salt ⓘ
- 3/4 lb. ham hock or meaty ham bone ⓘ
- 2 qt. water ⓘ
- 1 medium whole onion ⓘ
- 1 rib celery, sliced ⓘ
- 1/2 tsp. salt ⓘ
- black pepper to taste ⓘ
- 2 fresh turnip greens with roots chopped
- 4 medium potatoes, cubed ⓘ
- 2 carrots, sliced ⓘ
- 2 Tbsp. olive oil ⓘ
- 1 medium onion, chopped ⓘ
Instructions
- Pick over and wash beans.
- Cover with water and add a tablespoon of salt.
- Soak overnight.
- Next day, bring 2 quarts of water to boil; add ham hock.
- Drain and rewash beans.
- Add to the 2 quarts of boiling water.
- Add whole onion, sliced celery and 1/2 teaspoon of salt.
- Cook until beans are barely tender.
- Add chopped turnip roots and greens, potatoes and carrots.
