Pork Chili
Ingredients
- 4 slices bacon, diced ⓘ
- 2 c. chopped onions ⓘ
- 2 lb. pork shoulder, cubed ⓘ
- 1/2 to 1 tsp. salt ⓘ
- 1 1/2 tsp. pepper ⓘ
- 2 Tbsp. chili powder ⓘ
- 1 c. chopped green bell pepper ⓘ
- 2 (14 oz.) cans tomatoes ⓘ
- 16 oz. can tomato sauce ⓘ
- 2 (16 oz.) cans kidney beans, drained (liquid reserved) ⓘ
- 1 bay leaf ⓘ
- 1 Tbsp. oregano ⓘ
- 3 Tbsp. Worcestershire sauce ⓘ
- 2 c. tomato juice ⓘ
Instructions
- Saute bacon
- until
- crisp.
- Drain
- all but 1 tablespoon fat. Stir in onions and pork.
- Saute for 10 minutes, stirring constantly.
- Add
- salt,
- pepper,
- chili
- powder, bell peppers, tomatoes, tomato
- sauce and reserved bean liquid. Also add bay leaf, oregano, Worcestershire sauce and tomato juice.
- Simmer, uncovered, 1 1/2
- to
- 2 hours until tender.
- Stir in beans and simmer 10 minutes longer.
- Skim fat.
