Pork Chili

Ingredients

  • 4 slices bacon, diced
  • 2 c. chopped onions
  • 2 lb. pork shoulder, cubed
  • 1/2 to 1 tsp. salt
  • 1 1/2 tsp. pepper
  • 2 Tbsp. chili powder
  • 1 c. chopped green bell pepper
  • 2 (14 oz.) cans tomatoes
  • 16 oz. can tomato sauce
  • 2 (16 oz.) cans kidney beans, drained (liquid reserved)
  • 1 bay leaf
  • 1 Tbsp. oregano
  • 3 Tbsp. Worcestershire sauce
  • 2 c. tomato juice

Instructions

  1. Saute bacon
  2. until
  3. crisp.
  4. Drain
  5. all but 1 tablespoon fat. Stir in onions and pork.
  6. Saute for 10 minutes, stirring constantly.
  7. Add
  8. salt,
  9. pepper,
  10. chili
  11. powder, bell peppers, tomatoes, tomato
  12. sauce and reserved bean liquid. Also add bay leaf, oregano, Worcestershire sauce and tomato juice.
  13. Simmer, uncovered, 1 1/2
  14. to
  15. 2 hours until tender.
  16. Stir in beans and simmer 10 minutes longer.
  17. Skim fat.
