Ingredients

  • 4/5 qt. California Port wine
  • 1 qt. water
  • 2 qt. peeled and sliced apples (Jonathan or other tart apples)
  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. allspice

Instructions

  1. Heat water and Port wine to boiling in a large kettle.
  2. Add peeled and sliced apples and cook slowly for 1 1/2 to 2 hours, until mixture begins to thicken. Beat with an electric mixer to break up apple slices.
  3. Add sugar, salt, cinnamon, ground cloves, and allspice.
  4. Cook slowly, stirring occasionally, until thick, about 1 hour.

Tips & Substitutions

For a smoother texture, you can use a food processor instead of an electric mixer after cooking the apples. If you prefer a sweeter apple butter, consider increasing the sugar by a quarter cup or using a sweeter apple variety like Fuji. Additionally, you can substitute the spices with a premixed apple pie spice for convenience.

Serving Suggestions

This Port Apple Butter is delicious spread on toast, pancakes, or waffles. It also pairs beautifully with cheese platters or can be used as a filling for pastries. For a delightful dessert, serve it alongside vanilla ice cream or swirl it into yogurt. Try it as a topping for pancakes or with French Mint Tea for a cozy breakfast.

Storage & Reheating

Store any leftover Port Apple Butter in an airtight container in the refrigerator for up to two weeks. For longer storage, consider canning or freezing it. To reheat, simply warm it on the stovetop over low heat or in the microwave until heated through, stirring occasionally.

Frequently Asked Questions

Can I use a different type of wine?

Yes, you can substitute the California Port wine with a sweet red wine or dessert wine. Just keep in mind that different wines will alter the final flavor profile of the apple butter. Experimenting with various wines can lead to unique and delicious results.

How can I tell when the apple butter is thick enough?

The apple butter is ready when it has reduced significantly and coats the back of a spoon. You can also do the plate test: place a small amount on a chilled plate and run your finger through it; if it holds its shape, it’s thick enough.

Can I add other fruits to this recipe?

Certainly! You can mix in other fruits like pears or cranberries for added flavor and complexity. Just be mindful of their cooking times and sweetness, adjusting sugar as needed to achieve the desired taste.
