Ingredients

  • 6 eggs
  • 1 cup sugar
  • 1 1/2 teaspoons salt
  • 7 to 8 cups bread flour
  • 1/4 pound butter
  • 3/4 cup warm milk
  • 2 yeast cakes or packages
  • 1/4 cup water
  • anise (optional)

Instructions

  1. Beat 6 eggs and reserve about 1 tablespoon to brush on top of the bread.
  2. Add 1 cup sugar and 1 1/2 teaspoons salt to the eggs and mix well.
  3. Pour this mixture into a well made in 7 to 8 cups of bread flour.
  4. Melt 1/4 pound butter in 3/4 cup warm milk.
  5. Dissolve 2 yeast cakes or packages in 1/4 cup water.
  6. Mix the milk, butter, and yeast mixture into the flour and egg mixture.
  7. Add anise if desired, then knead the dough for 15 minutes until quite dry and elastic.
  8. Add more warm milk or flour as needed to achieve the right consistency.
  9. Let the dough rise twice, then form into 2 loaves in greased cake pans.
  10. When the loaves have doubled in size, slit the top with a sharp knife.
  11. Brush the tops with the reserved beaten eggs.
  12. Bake in a slow oven at 300° to 350°F for about 30 minutes until the bread sounds hollow when tapped.
