Ingredients

  • 1/2 pkg. frozen Posole (32 oz.)
  • 2 qt. water
  • 2 1/2 to 3 lb. pork, cut into bite-sized chunks
  • 8 to 10 green chiles, roasted, peeled, seeded, and chopped
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 1 or 2 (16 oz.) cans stewed tomatoes

Instructions

  1. Boil the hominy about 2 hours until it pops.
  2. Add pork, chopped onion, and chopped garlic to the pot.
  3. Cook until the meat is tender, about 1 hour, over medium heat.
  4. Add roasted, peeled, seeded, and chopped green chiles, stewed tomatoes, and season with salt to taste.
  5. Simmer until flavors meld and serve hot.
