- In a large, deep skillet, brown the possum (or ground beef) and chopped onion.
- Remove the mixture from the pan and drain it.
- In the same pot, mix the cans of Ro-Tel tomatoes, chopped green chilies, and the drained meat and onion mixture; cook on medium heat until the mixture is slightly cooked down.
- Return the possum and onion to the pot.
- Add the Velveeta cheese, milk, garlic powder, salt, and pepper; cook until the cheese is melted and the mixture is well combined.
- Serve hot with corn chips.
