Ingredients

  • 1 large possum or 2 lb. ground beef
  • 2 (16 oz.) cans Ro-Tel tomatoes with green chilies
  • 2 cans chopped green chilies
  • 1 medium onion, chopped
  • garlic powder to taste
  • salt to taste
  • pepper to taste
  • 2 (1 lb.) boxes Velveeta cheese
  • 1/2 cup milk

Instructions

  1. In a large, deep skillet, brown the possum (or ground beef) and chopped onion.
  2. Remove the mixture from the pan and drain it.
  3. In the same pot, mix the cans of Ro-Tel tomatoes, chopped green chilies, and the drained meat and onion mixture; cook on medium heat until the mixture is slightly cooked down.
  4. Return the possum and onion to the pot.
  5. Add the Velveeta cheese, milk, garlic powder, salt, and pepper; cook until the cheese is melted and the mixture is well combined.
  6. Serve hot with corn chips.
