Ingredients

  • 1 (3 to 4 lb.) whole chicken
  • 3 Tbsp. peanut oil
  • 1/2 cup sugar
  • 1 tsp. salt
  • 1 Tbsp. liquor (whiskey or gin)
  • 1 tsp. ajinomoto
  • 6 stalks green onions
  • 1 clove garlic
  • 1 clove garlic, crushed

Instructions

  1. Dress the chicken and rub thoroughly with the sauce.
  2. Sprinkle salt and pepper over the chicken.
  3. Heat a pot and add peanut oil.
  4. Brown the chicken evenly on all sides.
  5. Add crushed garlic and ginger to the pot.
  6. Pour the remaining sauce over the chicken and cover the pot.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
  8. Remove the chicken from the pot.
  9. To the remaining sauce, add sugar and ajinomoto; season to taste.
  10. Add the green onion strips to the sauce just before serving.
  11. Chop the chicken and pour the sauce over it. Garnish with parsley.
