Ingredients

  • 1 (1 1/2 to 2 lb.) beef top round roast
  • 12 tiny potatoes or 10 medium potatoes
  • 1 1/2 cups vegetable juice cocktail
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried basil
  • 24 baby carrots
  • 8 tiny boiling onions or 2 small onions

Instructions

  1. Preheat oven to 325°F.
  2. Peel a strip around tiny potatoes or cut medium potatoes into chunks.
  3. Lightly spray an unheated Dutch oven with no-stick spray.
  4. Add the beef top round roast and brown on all sides.
  5. Drain drippings from the pan.
  6. Add vegetable juice cocktail, Worcestershire sauce, dried basil, baby carrots, and quartered onions to the Dutch oven.
  7. Cover and cook in the oven for approximately 2 to 2.5 hours until the meat is tender.
  8. Serve hot with vegetables and sauce.
