Ingredients

  • 2 small whole chicken breasts, boned and skinned
  • 3/4 lb. ground pork
  • 1/2 c. chopped shrimp
  • 1/4 c. sesame seed oil
  • 1 c. finely chopped celery
  • 1/2 c. chopped green onion
  • 3 Tbsp. dry sherry
  • 2 Tbsp. cornstarch
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 pkg. pot sticker wrappers (gyoza) or wonton wrappers

Instructions

  1. Rinse the chicken, then chop finely or use ground pork.
  2. Place the meat in a bowl and stir in sesame oil, chopped celery, chopped green onion, dry sherry, cornstarch, sugar, and salt.
  3. Set out 6 to 8 wrappers at a time. Place 2 teaspoons of filling on each wrapper.
  4. Moisten the edges of each wrapper with a little water to seal.
  5. Fold the wrapper in half over the filling to form a half-moon shape.
  6. Pinch the edges together to seal the dumpling.
  7. Set the pot stickers down firmly, seam side up, so they sit flat.
