Ingredients

  • 2 lb. boneless, skinless chicken
  • 1 can sliced water chestnuts, drained
  • 1/2 cup soy sauce
  • 1/2 cup dry sherry or white wine
  • 3/4 cup water
  • 8 tsp. cornstarch
  • 1 1/2 Tbsp. peanut oil
  • 1 tsp. red pepper flakes
  • 4 tsp. sugar
  • 4 tsp. sesame oil
  • 4 tsp. rice wine vinegar
  • 4 tsp. water

Instructions

  1. Cut chicken into bite-size pieces.
  2. Mix 1/4 cup soy sauce, 1/4 cup sherry, 3/4 cup water, and 8 teaspoons cornstarch together. Toss over chicken and let marinate for 20 minutes.
  3. Mix remaining soy sauce, sherry, sugar, sesame oil, rice vinegar, 1 tablespoon water, and cornstarch to create the sauce mixture.
  4. Heat peanut oil in a wok or skillet.
  5. Stir-fry red pepper flakes for 1 to 2 minutes until fragrant.
  6. Add marinated chicken and stir-fry until chicken changes color.
  7. Add remaining sauce mixture, drained water chestnuts, and vegetables. Stir-fry until sauce thickens, vegetables are tender, and chicken is cooked through.
  8. Serve hot over rice.
