Potato Collops is a comforting baked dish featuring thinly sliced potatoes, onions, bacon, and cheese, perfect for hearty family meals or casual gatherings.

Ingredients

  • 3 medium potatoes
  • 1 large onion
  • salt and pepper to taste
  • 2 tsp chopped parsley
  • 1/4 lb raw bacon, diced
  • 2 tbsp butter
  • 1 cup milk, boiled
  • 3 tbsp grated cheese

Instructions

  1. Pare the potatoes and cut them into very thin slices.
  2. Chop the onion.
  3. Place a layer of sliced potatoes and onions in a greased baking dish.
  4. Sprinkle with seasonings, chopped parsley, and diced bacon (if using), then dot with butter.
  5. Repeat layers until all ingredients are used, finishing with a layer of potatoes on top.
  6. Pour the boiled milk evenly over the layered ingredients.
  7. Sprinkle the grated cheese over the top.
  8. Cover the dish and bake in a preheated moderate oven at 350°F (175°C) for 45 minutes.
  9. Uncover and continue baking until the potatoes are tender and the top is browned.
