Ingredients

  • 4 cups mashed potatoes
  • 1 egg
  • 1/3 cup finely chopped onion
  • 1 (8 oz.) package cream cheese
  • 1 teaspoon salt
  • a dash of pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the mashed potatoes, beaten egg, chopped onion, cream cheese, salt, and pepper until well blended.
  3. Transfer the mixture to a greased baking dish.
  4. Bake uncovered at 350°F (175°C) until the top is browned, about 30 minutes.
