Instructions
- Spray a skillet with cooking spray.
- Melt margarine in the pan.
- Arrange sliced potatoes and diced onions in the bottom of the skillet.
- Sprinkle with salt and pepper.
- Cover and cook for 20 minutes or until potatoes are lightly browned and tender.
- Sprinkle half of the tomato sauce over the potatoes.
- Then sprinkle half of the shredded mozzarella cheese over the sauce.
- Add all of the pepperoni slices.
- Pour the remaining tomato sauce over the pepperoni.
- Top with the remaining shredded cheese.
- Cover and cook until the casserole is heated through and the cheese is melted.
