Potato-Pepperoni Supper

A hearty potato and pepperoni casserole with melty cheese and savory tomato sauce, perfect for a quick family dinner or comforting gathering.

Ingredients

  • 5 Tbsp. margarine
  • 6 large potatoes, sliced
  • 1 small onion, diced
  • salt and pepper to taste
  • 1 (8 oz.) tomato sauce
  • 1 (11 oz.) shredded Mozzarella cheese
  • 1 (3 1/2 oz.) package pepperoni slices

Instructions

  1. Spray a skillet with cooking spray.
  2. Melt margarine in the pan.
  3. Arrange sliced potatoes and diced onions in the bottom of the skillet.
  4. Sprinkle with salt and pepper.
  5. Cover and cook for 20 minutes or until potatoes are lightly browned and tender.
  6. Sprinkle half of the tomato sauce over the potatoes.
  7. Then sprinkle half of the shredded mozzarella cheese over the sauce.
  8. Add all of the pepperoni slices.
  9. Pour the remaining tomato sauce over the pepperoni.
  10. Top with the remaining shredded cheese.
  11. Cover and cook until the casserole is heated through and the cheese is melted.
