Ingredients

  • 2 lb ground beef
  • 3 cups shredded cheese
  • margarine
  • 2 packages taco mix
  • 6 medium potatoes

Instructions

  1. Bake potatoes in microwave or oven until tender.
  2. If using microwave, cook each side for 12 minutes.
  3. Check potatoes for doneness and set aside.
  4. Slice potatoes and spread margarine or butter on them.
  5. Brown ground beef in a skillet.
  6. Drain excess fat from the beef.
  7. Mix ground beef with taco seasoning according to package instructions.
  8. Lay sliced potatoes in a baking dish.
  9. Top the potatoes with the seasoned ground beef.
  10. Sprinkle shredded cheese over the beef.
  11. Bake in a preheated oven at 350°F for 15 minutes or until bubbly and cheese is melted.
