Ingredients

  • 1 lb. ground beef
  • 1/4 cup chopped onion
  • 1 teaspoon ground cumin
  • 2 medium jalapenos, diced
  • 2 medium tomatoes, diced
  • 2 medium potatoes, diced
  • 10 flour tortillas

Instructions

  1. Brown the ground beef in a skillet.
  2. Add chopped onion, ground cumin, diced jalapenos, and diced tomatoes; cook for about 10 minutes.
  3. Cook the diced potatoes in water for about 12 to 15 minutes until tender.
  4. Add the cooked potatoes to the meat mixture and cook for another 5 minutes.
  5. Serve the meat and vegetable mixture on flour tortillas, topped with shredded Cheddar cheese and lettuce.
