Potato Porcupines are crispy, golden-fried potato balls with a tender interior, perfect as a snack or side dish for any casual meal or gathering.

Ingredients

  • 3 medium potatoes
  • 1 egg
  • 1 heaping Tbsp. flour
  • 1 tsp. salt
  • 1/2 c. shortening or oil

Instructions

  1. Wash and peel the potatoes and shred onto absorbent paper to drain.
  2. Combine the egg and flour and blend together.
  3. Immediately add the shredded potatoes to the egg mixture and stir until evenly mixed.
  4. Heat shortening or oil in a large skillet until hot (375°F).
  5. Place spoonfuls of the potato mixture in the skillet.
  6. Fry until golden brown on both sides.
