Instructions
- Wash and peel the potatoes and shred onto absorbent paper to drain.
- Combine the egg and flour and blend together.
- Immediately add the shredded potatoes to the egg mixture and stir until evenly mixed.
- Heat shortening or oil in a large skillet until hot (375°F).
- Place spoonfuls of the potato mixture in the skillet.
- Fry until golden brown on both sides.
