Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon soda dissolved in 1 teaspoon water
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups quick oats
  • 1 cup coconut
  • 1.5 cups small gumdrops

Instructions

  1. Preheat oven to 375°F.
  2. Mix together the dry ingredients: flour, baking powder, and salt, and set aside.
  3. In a separate bowl, cream together shortening, sugar, brown sugar, eggs, vanilla, and dissolved soda.
  4. Blend the two mixtures together and drop by teaspoonfuls onto a lightly greased cookie sheet.
  5. Bake for 12 minutes and let cool for 2 minutes before removing from the pan.
  6. If the cookies flatten out too much, add a little flour to the mixture.
