Ingredients

  • 3 lb. new potatoes
  • 2 large or 3 medium celery stalks
  • 8 hard-boiled eggs
  • 1 pt. Kraft Miracle Whip (regular or light)

  1. Cook potatoes with skins on until tender, then cool, peel, and cut into bite-sized pieces.
  2. Place the potato pieces in a large bowl.
  3. Cook and peel the eggs.
  4. Chop 6 eggs using an egg slicer in two directions and add to the bowl.
  5. Slice 2 eggs using the egg slicer in one direction and set aside for garnish.
  6. Finely chop the celery stalks and add to the bowl.
  7. Spoon 3/4 of a jar of Miracle Whip into the bowl and mix until all potatoes are well covered.
  8. Add salt and pepper to taste and mix in.
  9. Garnish the top with the reserved egg slices and lightly sprinkle with paprika.
  10. Chill the salad before serving.
