Ingredients

  • 2 eggs
  • 2 cups sugar
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup crushed pineapple, drained
  • 1/2 cup raisins
  • 1 cup black walnuts

Instructions

  1. Beat together oil, eggs, sugar, and vanilla.
  2. Add grated zucchini to the mixture.
  3. Add dry ingredients: flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
  4. Optional: Stir in drained crushed pineapple, raisins, and black walnuts.
  5. Pour batter into 2 greased and floured loaf pans (or 1 large pan).
  6. Bake at 350°F (175°C) for 1 hour.
