Ingredients

  • 6 to 8 large potatoes, mashed
  • 18 oz. sour cream
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chives
  • 1 c. frozen chopped spinach
  • 1 c. Cheddar cheese

Instructions

  1. Cook the frozen chopped spinach according to package directions.
  2. In a large bowl, stir together the mashed potatoes, sour cream, salt, pepper, and chives.
  3. Pour the mixture into a greased baking dish.
  4. Top with shredded cheddar cheese.
  5. Bake at 350°F (175°C) for 5 minutes until the cheese is melted and bubbly.
