Potato Spinach Puff

Ingredients

  • 2 1/2 c. hot mashed potatoes
  • 1 1/2 c. raw, chopped spinach
  • 1 tsp. salt
  • 4 Tbsp. butter or margarine, melted
  • dash of pepper
  • dash of paprika
  • 4 eggs, separated

Instructions

  1. Combine all except eggs. Blend in 4 egg yolks.
  2. Beat 4 whites until stiff. Fold into mixture.
  3. Pile lightly into greased 1 1/2-quart casserole.
  4. Bake at 375° until golden, about 40 minutes. Makes 6 servings.
