Ingredients

  • 6 to 8 baking potatoes
  • 1 lb Velveeta cheese
  • 1 c mayonnaise
  • 1 onion
  • salt
  • pepper
  • 6 strips bacon

Instructions

  1. Remove skins from cooked potatoes and cut into large dice.
  2. Toss the potatoes with Velveeta cheese, mayonnaise, chopped onion, salt, and pepper.
  3. Pour the mixture into a greased casserole dish and sprinkle with half-cooked bacon and sliced olives.
