Ingredients

  • 1 pkg. frozen hash browns
  • 1 small onion
  • 2 Tbsp. oleo
  • 1 can cream of chicken soup
  • 1 can Cheddar cheese soup
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. sour cream
  • 1 (13 oz.) can evaporated milk
  • 1/2 c. crushed cornflakes
  • 1/2 c. margarine

Instructions

  1. Thaw potatoes; spread over a 9 x 12-inch baking dish.
  2. Top with cornflakes and margarine.
  3. In a saucepan, sauté onion in 2 tablespoons of oleo.
  4. Stir in cream of chicken soup, cheddar cheese soup, evaporated milk, sour cream, salt, and pepper.
  5. Pour the mixture over the potatoes in the baking dish.
  6. Bake for 50 minutes.
