  • pepper
  • sprig of fresh basil
  • 1 bay leaf
  • 2 medium tomatoes
  • water

Instructions

  1. Peel and slice the potatoes.
  2. Combine the potatoes, olive oil, salt, pepper, basil, bay leaf, and peeled, seeded tomatoes in a skillet.
  3. Add water to just cover the ingredients.
