Ingredients

  • 1 cup butter
  • 4 eggs
  • 1 cup sugar (or 1/4 cup Equal as substitute)
  • 1 1/2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Bring butter and eggs to room temperature.
  2. Grease the bottom and about 1 inch up the sides of a 9 x 5 x 3-inch loaf pan.
  3. In a small mixer bowl, beat butter at medium speed until creamed and fluffy.
  4. Gradually add sugar, beating at medium speed for 6 minutes or until light and fluffy.
  5. Add vanilla, then eggs one at a time, beating about 1 minute after each addition.
  6. Scrape the bowl frequently. Mix flour, salt, and nutmeg together.
  7. Gradually add dry ingredients to the egg mixture and beat until thoroughly blended.
  8. Turn batter into the prepared pan.
  9. Bake at 325°F for 60 to 65 minutes.
  10. Cool in the pan for 10 minutes.
  11. Remove from the pan and serve.
