Ingredients

  • 15 oz. can pumpkin
  • 12 oz. can evaporated milk
  • 3 eggs
  • 1 cup sugar
  • 4 tsp. pumpkin pie spice
  • 1 package vanilla cake mix
  • 1.5 cups chopped pecans or walnuts
  • 3/4 cup butter or margarine, melted
  • Whipped cream (optional)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease the bottom and sides of a 13 x 9 inch baking dish.
  3. In a medium bowl, beat pumpkin, evaporated milk, eggs, sugar, and pumpkin pie spice with a wire whisk until smooth.
  4. Pour the pumpkin mixture into the prepared pan.
  5. Sprinkle dry cake mix evenly over the pumpkin mixture.
  6. Sprinkle chopped pecans or walnuts over the cake mix.
  7. Pour melted butter evenly over the top of the dessert.
  8. Bake for 50-60 minutes or until a knife inserted in the center comes out clean.
  9. Allow to cool slightly before serving.
  10. Cut into 4 rows by 3 rows to serve.
  11. Serve warm or chilled with a dollop of whipped cream sprinkled with pumpkin pie spice. Store covered in the refrigerator.
