Ingredients

  • 1 lb. ground beef
  • 1/2 cup uncooked rice
  • 1/4 cup chopped onion
  • 2 Tbsp. minced parsley
  • 1/8 tsp. pepper
  • 1 can cream of tomato soup
  • 1/2 cup water
  • 1/4 tsp. seasoned salt

Instructions

  1. Combine ground beef, rice, chopped onion, minced parsley, pepper, and seasoned salt in a mixing bowl.
  2. Mix well until all ingredients are evenly incorporated.
  3. Shape the mixture into small balls about 1 inch in diameter.
  4. Place the meatballs into a 1-quart casserole dish.
  5. In a separate bowl, mix the cream of tomato soup with water.
  6. Pour the soup mixture over the meatballs in the casserole.
  7. Cover the casserole and bake in a moderate oven at 350°F (175°C) for 30 minutes.
  8. Uncover and bake for an additional 30 minutes until cooked through and bubbly.
