Ingredients

  • 3 large eggs, separated
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 2 cups sweet milk
  • 1/2 stick butter
  • 1 teaspoon vanilla flavoring
  • 1 cup coconut
  • 1 baked 9-inch pie crust

Instructions

  1. Mix sugar and cornstarch well to prevent lumps.
  2. Add 1 cup of sweet milk, stirring constantly until all lumps are dissolved.
  3. Add the remaining cup of sweet milk.
  4. Use a very heavy saucepan.
  5. Cook over moderately hot heat until the mixture begins to thicken.
  6. Add well beaten egg yolks and stir.
  7. Cook until the mixture thickens again.
  8. Remove from heat.
  9. Add butter, vanilla flavoring, and coconut. Mix well.
  10. Beat egg whites until peaks form. Add 4 tablespoons sugar and beat for 30 seconds.
  11. Spread the meringue on top of the pie.
  12. Bake until light brown.
