Ingredients

  • 1/2 lb. prunes
  • 1/2 cup sugar
  • 1/2 cup prune juice
  • 3/4 cup molasses
  • 2/3 cup grated coconut
  • 1/4 cup butter
  • 1/4 cup orange marmalade
  • 4 eggs

Instructions

  1. Cook prunes with as little water as possible, using 3 tablespoons of molasses to sweeten.
  2. Make a syrup by combining sugar and prune juice and cook until dissolved.
  3. Add molasses, cooked prunes, and grated coconut to the syrup and cook for 10 minutes.
  4. Remove from heat and add egg yolks along with other ingredients, then fill the pie shell.
  5. Bake in a moderate oven for 30 to 40 minutes.
  6. Add meringue on top of the baked pie.
  7. Brown the meringue for a few minutes in the oven until golden.
