Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 3/4 cup cooked prunes, mashed
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Cream the shortening and sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift together the flour, baking powder, salt, nutmeg, and cinnamon.
  4. Gradually blend the dry ingredients into the creamed mixture, alternating with the cooked, mashed prunes.
  5. Pour the batter into two greased and floured 8-inch pans.
  6. Bake at 350°F (175°C) for 30 to 35 minutes until a toothpick inserted into the center comes out clean.
  7. Cool completely before frosting if desired.
