Pseudo Crab Cakes

Crispy zucchini cakes seasoned with Italian and Old Bay spices, perfect as a savory appetizer or snack for those craving a flavorful, vegetarian-friendly treat.

Ingredients

  • 2 c. zucchini, grated
  • 3/4 c. bread crumbs
  • 1 Tbsp. Italian seasoning
  • 1 Tbsp. Old Bay seasoning
  • 1/2 tsp. salt
  • pepper to taste
  • 2 eggs (Egg Beaters)
  • 1 Tbsp. mayonnaise
  • oil for frying

Instructions

  1. Mix grated zucchini, bread crumbs, Italian seasoning, Old Bay seasoning, salt, pepper, eggs, and mayonnaise in a large bowl until well combined.
  2. Form the mixture into cakes, about the size of traditional crab cakes.
  3. Heat oil in a skillet over medium-high heat.
  4. Fry the cakes until golden brown on one side, then turn and cook until the other side is also golden and the cakes are cooked through.
  5. Remove from oil and drain on paper towels.
  6. Serve hot and enjoy!
