- Mix grated zucchini, bread crumbs, Italian seasoning, Old Bay seasoning, salt, pepper, eggs, and mayonnaise in a large bowl until well combined.
- Form the mixture into cakes, about the size of traditional crab cakes.
- Heat oil in a skillet over medium-high heat.
- Fry the cakes until golden brown on one side, then turn and cook until the other side is also golden and the cakes are cooked through.
- Remove from oil and drain on paper towels.
