Ingredients

  • 1 can cream of broccoli soup
  • 1 can milk
  • 1/4 cup flour
  • 1 teaspoon dry mustard
  • 2 cups shredded cheese
  • 4 large eggs
  • 1 package frozen chopped broccoli

Instructions

  1. Preheat oven to 350°F and lightly grease an 11 x 7 x 1 1/2-inch pan.
  2. Mix the cream of broccoli soup, milk, flour, dry mustard, and pepper in a saucepan. Stir over medium heat until almost boiling.
  3. Remove the mixture from heat.
  4. Add shredded cheese and stir until melted and smooth.
  5. Incorporate the beaten egg yolks and the thawed, squeezed-dry broccoli into the cheese mixture until well blended.
  6. In a separate bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the beaten egg whites into the broccoli mixture.
  8. Pour the mixture into the prepared pan.
  9. Bake for 50 minutes or until the top is golden, puffy, and a knife inserted in the center comes out clean.
  10. Allow to cool for 5 minutes before serving.
