Ingredients

  • 1 c. sugar
  • 3/4 c. light corn syrup
  • 1/2 c. water
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 1 tsp. peppermint extract
  • food color

Instructions

  1. Butter the sides of a heavy 2-quart pan.
  2. Mix sugar, corn syrup, water, and salt in the pan.
  3. Add butter and cook over medium heat until it boils and the sugar dissolves, stirring constantly.
  4. Attach a candy thermometer and cook without stirring until the temperature reaches 248°F.
  5. Remove from heat.
  6. Stir in peppermint extract and food coloring.
  7. Pour the mixture into a buttered 8 x 8 x 2-inch pan.
  8. Allow to cool.
  9. With buttered hands, roll the cooled candy into balls.
  10. Return the balls to the pan.
  11. Once cold, wrap each piece in plastic wrap.
  12. Store at room temperature for up to 2 weeks.
