Pulled Pork Meatloaf

Ingredients

  • cooking spray
  • 2 eggs
  • 1/2 cup milk
  • 3 cups cooked pulled pork without sauce, chopped
  • 1 cup bread crumbs
  • 1/4 green bell pepper, chopped
  • 1 green onion, chopped, or to taste
  • 1 teaspoon dry mustard
  • 1 teaspoon ground black pepper

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  2. Whisk eggs and milk together in a bowl. Add pork, bread crumbs, bell pepper, green onion, mustard, and pepper; stir. Transfer pork mixture to the prepared loaf pan. Press pork tightly into pan and spread barbeque sauce on top.
  3. Bake in the preheated oven until heated through, about 1 hour. Let meatloaf cool 5 to 10 minutes before slicing and serving.
