Ingredients

  • 1/2 c. vegetable oil
  • 2 eggs
  • 1 2/3 c. sifted flour
  • 1 1/4 c. sugar
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/3 c. water
  • 1 c. canned or homemade pumpkin puree
  • 1 tsp. baking soda

Instructions

  1. Combine eggs, vegetable oil, water, and pumpkin puree in a bowl.
  2. Sift the dry ingredients together and gradually beat them into the pumpkin mixture.
  3. Pour the batter into a greased and floured 9 x 4 x 3-inch loaf pan or muffin pans.
  4. Bake at 350°F for 1 hour for the loaf or 25 minutes for muffins.
