Ingredients

  • 8 oz. Philadelphia fat-free cream cheese
  • 3/4 cup Cool Whip free
  • 1 teaspoon coconut extract
  • 15 oz. can pumpkin
  • 4-serving package Jell-O sugar-free instant butterscotch pudding mix
  • 2/3 cup Carnation nonfat dry milk powder
  • 1 cup water
  • 1 3/4 teaspoon pumpkin pie spice
  • 6 oz. Keebler graham cracker pie crust
  • 2 tablespoon flake coconut

Instructions

  1. In a medium bowl, stir cream cheese with a spoon until soft.
  2. Add 1/2 cup Cool Whip free and coconut extract. Mix gently to combine. Set aside.
  3. In a large bowl, combine pumpkin, dry pudding mix, dry milk powder, and water. Mix well using a wire whisk.
  4. Blend in pumpkin pie spice and remaining 1/4 cup Cool Whip free.
  5. Spread half of the pumpkin mixture into the pie crust.
  6. Evenly spread the cream cheese mixture over the pumpkin layer.
  7. Sprinkle coconut over top of the pie.
  8. Refrigerate for at least 2 hours before serving.
