Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup oleo, melted
  • 1 cup pumpkin
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1 quart vanilla ice cream, softened
  • whipped cream (optional)

Instructions

  1. Mix graham cracker crumbs, sugar, and melted oleo in the bottom of a 9-inch square pan to form the crust.
  2. Combine pumpkin, brown sugar, salt, cinnamon, ginger, and cloves in a separate bowl.
  3. Fold the pumpkin mixture into the softened vanilla ice cream until well blended.
  4. Pour the ice cream mixture over the prepared crust.
  5. Cover the pan with plastic wrap or a lid.
  6. Freeze until firm, about 4 hours or overnight.
  7. Cut into squares about 20 minutes before serving, and optionally top with whipped cream and pecans.
