Pumpkin Nickel Bread

Ingredients

  • 1/4 c. vegetable oil
  • 1/4 c. butter, melted
  • 3/4 c. sugar
  • 1 large egg
  • 1 c. pumpkin
  • 1 c. apple, unpeeled and grated
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 c. nuts, chopped
  • 1/2 c. raisins

Instructions

  1. Mix the first 6 ingredients together.
  2. In a separate bowl, mix the remaining ingredients.
  3. Combine both mixtures until well moistened.
  4. Spoon into a greased loaf pan and top with topping. Bake at 350° for 1 hours.
  5. Cool on rack.
  6. Freezes well.
