Pumpkin Nut Bars

Ingredients

  • 1 c. all-purpose flour
  • 1 c. firmly packed brown sugar
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. pumpkin pie spice
  • 2/3 c. cooked, mashed pumpkin
  • 1/2 c. shortening
  • 2 eggs, beaten
  • 1 c. chopped pecans
  • powdered sugar

Instructions

  1. Combine first 5 ingredients in a large mixing bowl; add next 2 ingredients.
  2. Beat on medium speed of electric mixer 1 minute or until smooth.
  3. Stir in pecans.
  4. Pour into a greased and floured 13 x 9 x 2-inch baking pan; bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean.
  5. Cool; sprinkle with powdered sugar.
  6. Cut into bars to serve.
  7. Yields about 2 1/2 dozen.
