Pumpkin Patch Pound Cake

Ingredients

  • 2 c. flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 c. butter
  • 1 c. sugar
  • 3/4 c. canned pumpkin
  • 1/2 to 3/4 tsp. almond extract
  • 4 eggs
  • whipped cream (optional)
  • toasted almonds (optional)

Instructions

  1. Combine flour, baking powder and salt.
  2. Set aside.
  3. Cream butter and sugar until light and fluffy.
  4. Add pumpkin and almond extract; mix well.
  5. Add eggs one at a time.
  6. Add dry ingredients and blend well.
  7. Pour batter into greased 9 x 5-inch loaf pan.
  8. Tap gently to remove air bubbles.
  9. Bake in preheated 350° oven for 60 to 65 minutes.
