- Select a firm, fresh medium eating pumpkin from the market produce department, avoiding Jack O'Lantern pumpkins.
- Wash and cut the pumpkin into slices or chunks suitable for pickling.
- In a large pot, combine 1 quart of white vinegar, 1 quart of water, and 5 pounds of sugar.
- Add 2 sticks of cinnamon, 2 teaspoons of whole cloves, 1 teaspoon of whole allspice, and 1 teaspoon of pickling spice to the pot.
- Bring the mixture to a boil, stirring until the sugar is dissolved.
- Add the pumpkin pieces to the hot pickling brine.
- Reduce heat and simmer until the pumpkin is tender, about 30-40 minutes.
- Remove the pumpkin from the brine and pack into sterilized jars.
- Pour the hot pickling syrup over the pumpkin in the jars, ensuring they are fully covered.
- Seal the jars and process in a boiling water bath for 10 minutes to ensure proper preservation.
- Allow the pickles to cure for at least 2 weeks before tasting for best flavor.
