Ingredients

  • 1 medium eating pumpkin from the market produce department
  • 1 quart white vinegar
  • 1 quart water
  • 5 pounds sugar
  • 2 sticks cinnamon
  • 2 teaspoons whole cloves
  • 1 teaspoon whole allspice
  • 1 teaspoon pickling spice

Instructions

  1. Select a firm, fresh medium eating pumpkin from the market produce department, avoiding Jack O'Lantern pumpkins.
  2. Wash and cut the pumpkin into slices or chunks suitable for pickling.
  3. In a large pot, combine 1 quart of white vinegar, 1 quart of water, and 5 pounds of sugar.
  4. Add 2 sticks of cinnamon, 2 teaspoons of whole cloves, 1 teaspoon of whole allspice, and 1 teaspoon of pickling spice to the pot.
  5. Bring the mixture to a boil, stirring until the sugar is dissolved.
  6. Add the pumpkin pieces to the hot pickling brine.
  7. Reduce heat and simmer until the pumpkin is tender, about 30-40 minutes.
  8. Remove the pumpkin from the brine and pack into sterilized jars.
  9. Pour the hot pickling syrup over the pumpkin in the jars, ensuring they are fully covered.
  10. Seal the jars and process in a boiling water bath for 10 minutes to ensure proper preservation.
  11. Allow the pickles to cure for at least 2 weeks before tasting for best flavor.
