Pumpkin Silk Pie

Ingredients

  • 1 pie crust
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 (16 oz.) can pumpkin
  • 1 1/2 c. powdered sugar
  • 2 tsp. vanilla
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 2 c. thawed nondairy whipped topping

Instructions

  1. In large mixing bowl combine cream cheese, pumpkin, sugar, vanilla, cinnamon, nutmeg and ginger.
  2. Beat on medium speed of electric mixer until smooth, about 1 to 2 minutes.
  3. Gently stir in whipped topping.
  4. Spread filling into crust.
  5. Top with pecans, if desired.
  6. Chill at least 3 hours or overnight.
