Pyrenees Chicken features tender, thinly sliced chicken breasts coated in garlic-infused egg and crispy bread crumbs, perfect for flavorful frying and versatile serving options.

Ingredients

  • 4 boned and skinned chicken breast halves
  • 2 eggs
  • 3 cloves garlic
  • 1.5 cups bread crumbs
  • olive oil for frying

Instructions

  1. Finely chop the garlic and mix well with eggs in a medium bowl.
  2. Slice chicken breast halves horizontally to have 2 thin slices shaped like the original.
  3. Soak chicken slices in garlic-egg mixture for at least one hour or overnight.
  4. Heat olive oil in a skillet.
  5. When oil is hot, dip each slice of chicken in bread crumbs to coat and add to the oil.
  6. Fry until golden, turning once.
  7. Serve with lemon slices or Hollandaise sauce.
  8. Great cold for picnics, too.
