- Heat oil in a nonstick skillet over medium heat.
- Add a flour tortilla to the skillet.
- Layer with half the Cheddar cheese, all of the cooked chicken, sliced mushrooms, and half the Monterey Jack cheese.

- Cover and cook until the cheese melts and the bottom tortilla is crisp and golden brown.
- Turn over and sprinkle remaining cheese on top.
- Cook until the bottom tortilla is crisp and golden brown and the cheese is melted.
- Cut into wedges and serve with sour cream and salsa, if desired.
