A cheesy, flavorful quesadilla filled with cooked chicken, mushrooms, and melted cheeses, perfect for a quick, satisfying meal or snack for any cheese lover.

Ingredients

  • 1 to 2 tsp. cooking oil
  • 2 flour tortillas (6-inch)
  • 1/2 c. shredded Cheddar cheese
  • 1/2 c. cubed cooked chicken
  • 1/4 c. sliced fresh mushrooms
  • 1/2 c. shredded Monterey Jack cheese
  • sour cream (optional)

Instructions

  1. Heat oil in a nonstick skillet over medium heat.
  2. Add a flour tortilla to the skillet.
  3. Layer with half the Cheddar cheese, all of the cooked chicken, sliced mushrooms, and half the Monterey Jack cheese.
  4. Top with the second tortilla.
  5. Cover and cook until the cheese melts and the bottom tortilla is crisp and golden brown.
  6. Turn over and sprinkle remaining cheese on top.
  7. Cook until the bottom tortilla is crisp and golden brown and the cheese is melted.
  8. Cut into wedges and serve with sour cream and salsa, if desired.
