Ingredients

  • 9 oz. fresh cheese ravioli
  • 1 Tbsp. olive oil
  • 3 fresh tomatoes
  • 6 oz. jar marinated artichokes
  • 2 large scallions
  • 3 garlic cloves

Instructions

  1. Cook ravioli according to package directions; drain well.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add crushed garlic and cook for 1 minute until fragrant.
  4. Stir in chopped tomatoes and cook for 3 minutes.
  5. Add drained marinated artichokes and sliced scallions; cook for another 2 minutes.
  6. Transfer cooked ravioli to the skillet and toss to combine.
  7. Serve immediately.
