Ingredients

  • 1 1/4 cups minute rice
  • 1 1/2 cups water
  • 15 oz. can beans (butter beans, kidney beans, etc.)
  • dash of black pepper
  • dash of crushed red pepper

Instructions

  1. Wash beans under clear water to remove the original liquid.
  2. Add beans, black pepper, and water to a 2-quart saucepan.
  3. Bring to a brisk boil.
  4. Add rice and stir. Remove from heat.
  5. Let stand, covered, for 5 minutes to absorb the liquid.
  6. Stir and serve.
  7. For extra flavor, sprinkle with crushed red pepper or your favorite spice.
