Ingredients

  • 2 c. milk
  • 2 1/2 Tbsp. light margarine
  • 1/4 c. sugar
  • 1/2 c. fat-free egg substitute
  • 1/2 tsp. vanilla
  • 1/4 tsp. nutmeg
  • 1/2 c. raisins
  • 2 c. raisin bread cubes

Instructions

  1. In a 1-quart saucepan, scald the milk with margarine and sugar.
  2. In a medium bowl, beat the egg substitute slightly.
  3. Stir the egg substitute into the milk mixture.
  4. Add vanilla, nutmeg, and raisins to the mixture.
  5. Combine the mixture with the raisin bread cubes and pour into a baking dish.
  6. Bake until the pudding is set and golden on top.
