Ingredients

  • 2 Tbsp sugar
  • 3 Tbsp cornstarch
  • 1 1/2 cups water
  • 3 egg yolks
  • 1/4 tsp salt
  • 3 egg whites

Instructions

  1. Caramelize 2 tablespoons of sugar in a pan until golden brown.
  2. Moisten 3 tablespoons of cornstarch with a little cold water to form a smooth paste.
  3. Combine the caramelized sugar, cornstarch mixture, 1 1/2 cups water, beaten egg yolks, and salt in a saucepan.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  5. Pour the custard into a pre-baked pie shell and let it cool.
  6. Beat the egg whites until stiff peaks form and spread or pipe on top of the cooled filling if desired.
